What to do when there’s no more granola (and no oats to make any), no cereal, no eggs, no… nothing?

Make Cornmeal Mush, of course! This is my absolute favorite hot cereal. (Okay; it’s the only hot cereal I like!)

From More With Less: (would there be breakfast without More With Less?)

Bring to boil in a saucepan:

    3 c. water

Combine and stir in:

    1 c. cold water (or milk, or powdered milk and water)
    1 c. cornmeal
    1/4 c. flour
    1 tsp. salt

Stir constantly as mush thickens. A wire whisk works well. Cook 30 minutes, covered, on low. Serve with a [generous] pat of butter, a drizzle of maple syrup, and milk.

    You know, Danica….Only you could make cornmeal mush look this good!! That picture looks so yummy, I’m going to try it myself! Thanks for sharing the recipe, too! And, thanks to you, I love yogurt with granola and a little syrup on top! :o)

    Oh, I wanted to tell you about a website I found: http://www.allrecipes.com You can punch in what ingredients you have (and don’t have) and it will find a recipe for you. It’s a lifesaver when you you’re a money saver! Last night I made baked chicken with whatever I had to scrounge up, and it was GREAT!

    Mix potato flakes, parmesan cheese, and garlic salt (I added onion powder and Italian seasoning). Dip chicken pieces into melted butter, then roll in potato flakes to coat. Place in a greased pan and back at 375 until crisp. It was SO YUMMY!

    I also got a bourbon chicken recipe from there. I didn’t have any bourbon, but I still wanted to make it. Thankfully, other people can make comments on the recipes, and one lady suggested using vanilla extract to substitute! So I did that and the chicken came out great!

    Angela: I LOVE allrecipes! Their search feature is awesome, you’re right. I’m forever thinking things like, “Hmm, I feel like pancakes with oats in them, but I don’t have such a thing in my books…” And I don’t have the time to concoct my own recipes for such things — but inevitably, SOMEONE on allrecipes already has! Love it!

    Unfortunately for me, my kids like oatmeal far better than cornmeal mush. I don’t dislike oatmeal, but I prefer cornmeal mush, for sure.

    Anyway, I hope Jameson gets to eat oatmeal every great once in a while! ;)

    Thanks so much for this. This might sound weird, but I spent the first few years of my teenage lifein Sicily, then travelled around the world. Now I’m living in Australia, with my Chinese wife, and son we had whilst living inJapan! Truly international, eh? Anyway, I’ve been trying to rediscover the smells and tastes of my youth with some authentic Italian recipe like these, best I’ve found so far! Thanks again, I’ll see if I can add the feed to my google reader tonight, though my son usually does that for me!
